Travel Recipes!

Part of the fun when traveling is eating yummy food. Good food will create better memories. One time I prepared and ate spinach dahl while watching the sunset in Joshua Tree. The sky was going off with beautiful shades of orange, yellow and red! The key to making gloreous memories like this one is planning ahead. The few extra minutes in preperation will have a huge payoff in the end. Here are some of my favorite meals that I make.

Cook On The Go Meals:

1- Tomato Macaroni and Cheese - I make this meal more than any meal out there.  The name says it all! Keep it one step simpler and omit the cashew milk. It still tastes fantastic with one less step. 

2- One-Pot Broccoli, Rice and Cheese- Hot food tastes a zillion times better when camping. Why is that? This is one to definitely add to your list.

3- Breakfast Veggies - These are great to cook in the morning, make extra and have the leftovers for dinner with some rice and your favorite teriyaki or peanut sauce. Super easy, filling, and healthy. 

Prep ahead of time meals

1- Kinda Chili, Kinda Not - Super easy to make at home and reheat. You can even bring cornbread to serve with it. 

2- Boudha Bowls - Prepare everything but the rice at home. Cook the rice at camp and toss everything else together. 

3- Cheesy Cauliflower Soup - This soup saves and reheats so well. It's also pretty easy to make. We often serve it with garlic toast and prepare it while the soup is heating up.
