Buddha Bowls

Fresh food is power!
Ingredients
3 cups cooked rice (I use calrose rice)
1 can black beans
8-12 ounces cheddar cheese (amount depending on how much you like cheese!)
1 cup fresh tomatoes
1/4 cup green onions
1 avocado
1/2 cup cilantro
Directions Below
Step ONE:
Cook 3 cups white rice per package directions (I use calrose rice).
Step TWO:
1 can black beans, drained and rinsed
8-12 ounces cheddar cheese, grated (amount depending on how much you like cheese!)
1 cup tomatoes, chopped
1/4 cup green onions, chopped
1 avocado, chopped
1/2 cup cilantro, chopped
Scoop 1 cup rice on plate or bowl. Add desired portions, of above ingredients, on top of rice. Serve!
Optional Ingredients:
one can chopped green chilies
sliced olives
salsa of choice (tomato or fruit salsa taste fantastic!)
sour cream
