Kinda Chili, Kinda Not

You either are or you aren't. Why don't you test this recipe out and tell me what you think. Are you? or aren't you?

Ingredients

2 Tablespoons olive oil
1 small onion
1/2 large red pepper
1 can black beans
4 ounces diced green chilies
3 cloves garlic
2 cups stewed tomatoes
Tablespoons red wine vinegar
Tablespoons cumin
2 teaspoons dried oregano
1/8 teaspoon fresh ground pepper
1 cup fresh spinach
1 avocado
1/2 cup cilantro
colby jack cheese and/or pepperjack cheese for topping

     Directions Below

 

 

Step ONE:

Tablespoons olive oil
1 small onion, diced
1/2 large red pepper, diced

Heat olive oil over medium heat. Add onion and red pepper stirring occassionally for about 10 minutes.

Step TWO:

1 can black beans, rinsed
4 ounces diced green chilies
3 cloves garlic, crushed
2 cups stewed tomatoes
2  red wine vinegar 
Tablespoons cumin
2 teaspoons dried oregano, crushed
1/8 teaspoon fresh ground pepper

Add above and bring to soft boil over medium-high heat. Once boiling, reduce heat to medium. 

Step THREE:

1 cup fresh spinach

Stir in spinach. Cook for 10 minutes to allow flavors to blends. Serve on top of rice. 

Step FOUR:

1 avocado
1/2 cup cilantro
colby jack cheese and/or pepperjack cheese for topping, shredded

Top chili with desired amount of above ingredients.
