Easy Vegan Fried Rice

No need for takeout with this recipe. You can whip it up in a flash!

Ingredients

2 Tablespoons sesame oil
1/2 cup medium onion
1 cup broccoli florets
2 medium carrots
1/2 cup frozen peas
1/2 cup frozen corn
1 cup water

3 cups cooked, day old calrose rice*
3 Tablespoons sesame oil
2 cloves garlic or one oriental spice blend
1/2 cup tamari or more to taste
green onion or chives for garnish

Step ONE:

2 Tablespoons sesame oil
1/2 cup medium onion, chopped
1 cup broccoli florets, chopped small
2 medium carrots, peeled, diced
1 cup water

1/2 cup frozen peas
1/2 cup frozen corn

Heat oil in large non-stick pan over medium heat. Add onion and cook for about 5 minutes stirring occasionally. Add broccoli, carrots, water and increase heat to medium-high. Cover with lid until broccoli and carrots are cooked, about 10 minutes. Remove lid and add peas and corn. Stir occasionally until heated through for about 5 minutes. If there's any water left, drain and cook for 2 minutes stirring frequently until water evaporated off vegetables. Remove from pan and place in large serving bowl. 

Step TWO:

3 cups cooked, day old calrose rice*
3 Tablespoons sesame oil
2 cloves garlic, crushed or one oriental spice blend
1/2 cup tamari or more to taste
green onion or chives for garnish

Heat oil in same non-stick pan over medium-high heat. Add cooked riced and stir until oil is mixed in. Cook rice until it becomes a little brown on the outside and heated through. Stir occasionally. Turn heat off. Stir in garlic or one oriental spice blend and tamari. Mix in vegetables from Step One and garnish with green onion or chives.

*Rice that is cold and a day or two old works best in this recipe. If you don't have this option, make rice and cool prior to frying in the pan. Placing the rice in the freezer for about 20 minutes (stir after 10 minutes) helps speed up the cooling process. Calrose rice (my favorite) can be substituted for other types of white rice. 

Options:

Add in diced mushrooms when onion added.
Omit broccoli and carrots and add frozen mixed vegetables to make meal faster.
Add cauliflower.
