Vegetarian Sushi Rolls
She believed she could, sushi did.
Ingredients
2 cups cooked sushi rice
4 nori wraps
1/2 mango
1/2 avocado
1/2 cucumber
4 ounces cream cheese
1/2 lime or lemon
Spicy Aioli
Tamari or liquid aminos

Step ONE:
2 cups sushi rice
Make sushi rice and allow to cool to room temperature.
Step TWO:
1/2 mango, in thin slices
1/2 avocado, in thin slices
1/2 cucumber, in thin slices
4 ounces cream cheese, in thin slices
1/2 lime or lemon, sliced very thin in small pieces
Tamari or liquid aminos
Prepare above ingredients.
Step THREE:
4 nori wraps
Place one nori wrap, shiny side down on bamboo matt. Get fingers wet and smash 1/4 rice most of the way up all four sides of the nori. Carefully flip over onto bamboo matt so the rice is facing on the outside. Place mango, avocado, cumcumber and cream cheese at top of roll. Slowly roll up, giving the bamboo matt a slight squeeze, with every full turn. Place a thin to medium sized strip of spicy aoili on top of roll. Slice roll into 8 equal pieces starting at the center of the roll. Place one lime or lemon slice to each sushi piece. Put on plate, serve with tamari or liquid aminos.
