Vegan Spring Rolls

What a great way to get lots of veggies in your diet! Fresh, fun and yummy! 

Ingredients

8 ounces angel hair rice noodles
2 teaspoons sesame oil
10 rice wraps

1 head of romaine lettuce or red leaf lettuce
2 carrots
1 cucumber
4 ounces fresh mint
Serve with peanut sauce

Step ONE:

8 ounces angel hair rice noodles
2 teaspoons sesame oil

Cook rice noodles according to package directions. Rinse in cold water. Mix sesame oil into noodles. 

Step TWO:

10 rice wraps
1 head of romaine lettuce or red leaf lettuce, chop into small pieces
2 carrots, cut into thin strips
1 cucumber, cut into thin strips
4 ounces fresh mint, remove leaves from stem

Boil 2 cups water and place in 9x9 or like dish. Quickly place one rice wrap in and out of the water, only submerge for 1-2 seconds. Place on plate. Put small amount of lettuce, 2-3 strips of carrots, 2-3 strips of cucumber, and 3 mint leaves into wrap. Tuck and roll wrap. Repeat until all ingredients are gone. 

Serve with yummy peanut sauce!

Options:

4 ounces thai basil, remove leaves from stem
6 ounces cilantro, chopped
I like all three (mint, thai basil, and cilantro)!
Try swiss chard, spinach or any type of green in place of lettuce. 

Tips:

Careful not to over stuff.

If rice wrap breaks while rolling, it was kept in water too long. Only dip for 1-2 seconds.
