Vegan Ramen

 Savory, rich, creamy vegan ramen broth. Does it get better then this?

Ingredients

12 ounces brown rice ramen noodles (or ramen noodles of choice)
2 Tablespoons sesame oil
Tablespoon garlic (about 3-4 cloves)*
Tablespoon ginger*
Tablespoon shallot*
Tablespoon green onion*
48 ounces clear veggie broth (non-tomato based) 
Tablespoons tamari
Tablespoon mirin
Tablespoons red miso paste **
Tablespoons yellow miso paste **
2 teaspoons nutritional yeast
1 medium dried shitake mushroom (available at asian markets)
1 cup broccoli
1/2 cup carrots
4 white mushrooms or baby bellas
1 cup spinach
3 sprigs green onion

     Directions Below

 

Step ONE:

12 ounces brown rice ramen noodles (or ramen noodles of choice)

Cook according to package directions. Rinse with hot water. Set aside until broth complete.

Step TWO:

Tablespoons sesame oil

Tablespoon garlic, crushed (about 3-4 cloves)

Tablespoon ginger, minced

Tablespoon shallot, finely diced

Tablespoon green onion, diced (white only)

OR USE TWO ORIENTAL SPICE BLENDS

Heat oil in 2 quart sauce pan over medium heat. Reduce heat to medium-low and add above ingredients for about 5 minutes stirring frequently.

Step THREE:

48 ounces clear veggie broth (non-tomato based)

Tablespoons tamari

Tablespoon mirin

Tablespoons red miso paste **

Tablespoons yellow miso paste **

2 teaspoons nutritional yeast

1 medium dried shitake mushroom (available at asian markets)

Add above ingredients to Step TWO. Bring to boil, reduce heat to medium-low allowing it to simmer for 20 minutes.

Step FOUR:

1 cup broccoli

1/2 cup carrots, sliced about 1 inch in length and 1/4 inch wide

4 white mushrooms or baby bellas, sliced

1 cup spinach

3 sprigs green onion, sliced (white and green)

Add broccoli, carrots, and mushrooms to Step THREE. Increase heat to medium. Cook veggies for 10 minutes or until fork tender. Remove shitake mushroom from broth. Place about 1/4-1/2 cup spinach in bottom of bowl. Add ramen noodles and broth on top. Garnish with green onions.

Options:.

Add bok choy instead of spinach. Cook in broth with broccoli.

Add snow peas 1 minute prior to serving (you only want them heated through to keep their crunch and flavor).

Add frozen corn 1 minute prior to serving.

*Make your life easy! Omit garlic, ginger, shallot and green onion. Use two  ORIENTAL SPICE BLENDS instead!


**May substitute miso for any two types. Red and yellow are my favorites in this recipe.
