Chilled Tomato Pasta

Fast, easy and delicious? Yes! It can happen! 

 Ingredients

12 ounces gluten-free angel hair noodles (I like the brand Barilla)
Tablespoon olive oil
12 ounces cherry tomatoes or 4 medium tomatoes
5 cloves garlic
4 ounces fresh basil
1/2 teaspoon sea salt
fresh ground pepper

Step ONE:

12 ounces gluten-free angel hair noodles (I like the brand Barilla)
Tablespoon olive oil

Cook pasta according to package directions to al dente. Rinse with cold water until noodles are cold. Place in serving bowl. Mix in olive oil. 

Step TWO:

12 ounces cherry tomatoes sliced in half or 4 medium tomatoes, diced
5 cloves garlic, crushed
4 ounces fresh basil, diced
1/2 teaspoon sea salt
fresh ground pepper 

Place all ingredients in bowl. Let sit for 5 minutes or until pasta is cooked. Pour over pasta and serve!

Options:

This makes a beautiful dish in the summer using heirloom tomatoes or tomatoes of all different colors.
