Vegetarian Italian Meatballs

Let your new obsession begin! These are the mother of all meatballs. 

Ingredients

2-3 Tablespoons olive oil
1/2 cup yellow onion
1/2 cup red pepper
1 pound beyond beef
4 medium garlic cloves
1/2 cup fresh basil
2 Tablespoons fresh italian parsley
1 teaspoon balsalmic vinegar
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper

Step ONE:

2-3 Tablespoons olive oil
1/2 cup yellow onion, diced very small
1/2 cup red pepper, diced very small

In small saucepan heat olive oil over medium heat. Add onion and peppers. Cook until soft, approximately 15 minutes. Remove from heat. 

Step TWO:

Heat oven to 400 degrees
1 pound beyond beef
4 medium garlic cloves, crushed
1/2 cup fresh basil, finely chopped
2 Tablespoons fresh italian parsley, finely chopped
1 teaspoon balsalmic vinegar
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper

Combine and mix above ingrediants. Mix in onion and peppers from Step ONE. Shape into 1 inch meatballs. Place on covered baking sheet. Place in oven when heated for 20 minutes. Remove from oven. Now ready for your favorite sauce!
