Sweet and Sour Sauce with Roasted Vegetables

Looking for AMAZING sweet and sour? Here it is!!!

Ingredients

2 cups calrose rice (or your favorite rice)
3 and ½  cups water
2 Tablespoons olive oil
1 medium onion
1 green pepper
1 can pineapple with juice
1 cup celery
1 quart of stewed tomatoes or 16 ounces canned diced tomatoes
1/2 cup white vinegar
1/4 cup pure maple syrup
2 teaspoons tamari
1/2 teaspoon dried ginger
1/2 teaspoon sea salt
1 medium eggplant*
1 small zucchini*
1 small butternut squash*
2 Tablespoons olive oil
1/4 cup cold water
1/4 cup corn starch

     Directions Below

Step ONE:

2 cups calrose rice (or your favorite rice)

3 and ½ cups water

Combine ingredients and bring to boil. Reduce heat to low, cook for 15-20 minutes until liquid absorbed.

Step TWO:

2 Tablespoons olive oil

1 medium onion, diced

1 green pepper, diced

Heat olive oil in pan over medium heat. Add onion and green pepper. Cook for about 10 minutes.

Step THREE:

1 can pineapple with juice

1 cup celery, sliced

1 quart of stewed tomatoes or 16 ounces canned diced tomatoes

1/2 cup white vinegar

1/4 cup pure maple syrup

2 teaspoons tamari

1/2 teaspoon dried ginger

1/2 teaspoon sea salt

1/4 teaspoon fresh ground pepper

Add ingredients to Step TWO. Increase heat to high until it boils. Reduce heat to low to simmer. Cook for 20 minutes.

Step FOUR:

Turn oven on high broil

1 medium eggplant

1 small zucchini

1 small butternut squash

Tablespoons olive oil 

Dice eggplant, zucchini, and squash into equal, bite sized pieces. Place in big bowl. Mix in olive oil until all vegetables are gently coated. You don't want them soaked in olive oil.  Put on baking sheet and place in oven on high broil for 20 minutes, or until fork tender. Watch closely and rotate occasionally to prevent burning.

Step FIVE:

1/4 cup cold water

1/4 cup corn starch

Whisk above together. When mixed, whisk into Step TWO stirring constantly to prevent it from clumping. Once thickened, serve sauce over rice with roasted vegetables on top.

Options:

*Any combination of roasted vegetables will work. Be creative!
