Cheesy Breakfast Potatoes

Okay, you can probably have these at every meal, not just breakfast.
Ingredients
4 medium yukon gold potatoes (or potatoes of choice)
2 Tablespoons olive oil
sea salt
fresh ground pepper
8 ounces cheddar cheese

Step ONE:
4 medium yukon gold potatoes
2 Tablespoons olive oil
sea salt
fresh ground pepper
Stab each potato with fork a few times. Place in microwave for 6 minutes. Dice potatoes. Heat pan with olive oil over medium heat. Add potatoes. Sprinkle with salt and pepper. Cook until browned. Where potatoes were primarily cooked in the microwave, it should only take about 10 minutes.
Step TWO:
8 ounces cheddar cheese, grated
Reduce heat to low, add cheese, and cover with lid for 5 minutes. Serve!!!
Options:
Add onion while cooking potatoes.
Add sliced mushrooms while cooking potatoes.
Serve with poached or over easy eggs.
