Rainbow Smoothies

It's all in the name! Call it a Rainbow Smoothie and it'll please even the pickiest eaters! Who doesn't like a rainbow?

Ingredient Suggestion List:

RED: Cherries, Red Beets, Strawberries, Watermelon, Apples, Raspberries

ORANGE: Carrots, Apricots, Oranges, Tangerines, Papaya, Mango, Peaches, Nectarines

YELLOW: Bananas, Apples, Pineapple, Golden Beets

GREEN: Spinach, Kale, Collard Greens, Beet Greens, Swiss Chard,  Bok Choy, Cucumber, Celery, Avocado, Kiwi, Green Apple, Pears, Green Grapes

BLUE: Blue Berries

PURPLE: Plums, Purple Grapes, Figs, Blackberries

3 cups nut milk or coconut water

     Directions Below

 

Step ONE:

3 cups nut milk or coconut water

Add nut milk or coconut water to blender. Add greens of your liking to blender. Blend well. Your goal is 60% greens (or more). Add the remainder in fruit. Mix until smooth. Pour smoothies into mason jars (usually 5). Will last 2 days and if your lucky, three.

Tips:

These fruit and vegetable suggestions are just a few things that you can put in your rainbow smoothie. The possibilities are endless! Be creative! 

For beginners- For your greens, start with 30-40% spinach and drink for several days. Slowly add in other greens until you have a variety and up to 60%. Spinach is sweet and it's easy to hide in smoothies. Working your way up gradually will help disguise the taste for kids (who have more taste buds) and adults who aren't used to eating greens. 

Make it a group effort! Kids that help will likely love their creation a lot more than just handing them a drink.

Adding a banana will make it creamy and make the 'green' flavor a little milder. Add two bananas for beginner rainbow smoothie drinkers.

Adding blackberries will make it more "purple" in color, helping beginners get past the "green" color. 

Fresh fruit is always best but frozen can be easy and taste great!

A high-speed blender is REALLY nice and worth every penny! If you don't have one, use whatever you have on hand. You may need to add ingredients slowly, blending well between.

Lots of people add protein powders or supplements to smoothies. I'm not a fan of this and try to keep things as natural as possible.

Options:

Throw in fresh herbs like mint, cilantro, basil or ginger for a fresh change.
