Fresh Black Bean Salsa

What a great time to get FRESH!
Ingredients
1 can black beans
1 red pepper
1 cup tomatoes
1/4 cup green onion
1/2 cup fresh cilantro
3 cloves garlic
1 lime
salt and pepper
Directions Below
Step ONE:
1 can black beans, drained and rinsed
1 red pepper, chopped
1 cup tomatoes, chopped
1/4 cup green onion, chopped (whites and greens)
1/2 cup fresh cilantro, chopped
3 cloves garlic, crushed
1 lime, juiced
salt and pepper to taste
Mix all ingredients in a bowl. Serve alone or with chips.
Options:
Turn into a bigger meal by adding rice with cheese on top, or putting mixture in a quesadilla!
Add an extra can of black beans for leftovers.
