Creamy Vegan Garlic Mashed Potatoes

This is the perfect reason to have garlic breath!

Ingredients

8 medium potatoes
1/4 cup vegan butter
1/4 cup cashew milk
3 medium cloves garlic
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper

Step ONE:

8 medium potatoes, chopped

Place potatoes in pan covered with water. Boil, reduce heat to medium, cook until soft but not mushy- about 15-20 minutes depending on how small you chop your potatoes. Drain, pour in large bowl.

Step TWO:

1/4 cup vegan butter

3 cloves garlic, crushed

1 teaspoon sea salt

1/4 teaspoon fresh ground pepper

1/4 cup cashew milk 

Add ingredients to Step ONE, stir. Get out your electric hand mixer and whip until smooth. Taste! Does it need more salt or garlic? Try a little garlic salt if it does.

Options:

Adding shredded cheddar cheese on top, makes it a meal!
